Soak one cup of cashews in a bowl of water, rinse and blend them in a food processor with freshly-squeezed lemon juice and 1/4 cup of vegetable broth. Season with salt to taste. For added flavor, season with fresh herbs like dill, tarragon, thyme or rosemary or garlic or hot sauce. Eat on burgers and sandwiches or use for mayonnaise-based salads!

Recipe: Apple Chips

Thin, crispy and easy — apple chips will easily become your new favorite fall snack. After you’ve washed and dried your apples, cut off the ends and core the middle. Cut into 1/8-inch rounds. Place a few slices on parchment paper on a microwave-safe plate. Microwave for 5 minutes or until the edges start to curl up. Flip the slices and microwave for an additional 30 seconds. Allow 10 minutes to cool until crispy and dry.
